Peach and Basil Spritzer

It's summer time and sure you could just have a cold one and call it a day, OR you could add a little shimmer to your cocktail hour with this light and refreshing spritzer.

BONUS - you can skip the alcohol all together - just add more seltzer and it will still be wonderful.

PLUS - it's summer and that means it's peach season, so this chiller combines the flesh flavors of ripe peaches and basil for a perfect summer treat!

The bit of sparkle added by the club soda makes for a delicious treat on a warm summer evening.

And...I like to think that this is something the very elegant Colleen would serve to her customers at her store La Belle Maison...on the high street of Queensbay. You can read all Colleen in the Queensbay Small Town contemporary romance series right here...

 peach and basil spritzer recipe

Ingredients:

4 ripe peaches, pits removed and quartered

1 T. honey

10-12 fresh basil leaves, washed
½ c. water

1 bottle sauvignon blanc or pinot grigio, chilled

3 cups club soda, chilled

additional sprigs of fresh basil, for garnish

1 ripe peach, pit removed and cut into slices for garnish

Directions:

Add quartered peaches, honey, basil leaves and water to blender and blend until smooth. Once blended, spoon mixture into an ice cube tray and place in the freezer until frozen solid.

When ready to serve, pour the bottle of chilled wine and club soda into a large pitcher. Stir with a long-handled spoon to combine. Add peach ice cubes to wine glasses and top with the wine mixture. Add remaining flavored ice cubes to the pitcher or reserve to add to the wine glasses when they are refilled.

Garnish with fresh peach slices and basil before serving.
